Recipe: Easy Protein Bites

In my food journey of exploring recipes that are vegan, whole-food plant-based, and more, I don’t always hit the mark. Some of the recipes are terrible, but some are great.

I came across a recipe for “Energy Protein Balls” in the Kroger magazine and changed it a bit based on what I already had in my kitchen. Here’s what I came up with – it was quick, easy, and so yummy:

I made a note to try it with the powder PB2. Add water to PB2, and it creates a smooth peanut butter that’s much lower in calories and fat, but still high in protein. It’s a great replacement for peanut butter when you’re making a recipe, or even a PB&J sandwich. You can find it in the peanut butter section of the grocery store.
